Healthy Egg Bites Recipe

We LOVE Starbucks egg bites. So it was only natural to make a Healthy Egg Bite Recipe for our gym members. These are quick, easy to make, and the perfect meal prep breakfast or snack option for our busy fit bees!

Ingredients:

-6 eggs

-1 cup egg whites

-1/2 cup red onion, chopped

-1/4 cup green bell pepper, seeded and chopped

-4 thin slices of bacon, cooked and chopped

-3/4 cup cheddar cheese, shredded

-1/2 teaspoon salt

-1 teaspoon black pepper

-Cooking Spray

Instructions:

  1. Preheat oven to 350 degrees.

  2. Line a 12 count muffin pan with liners and spray with cooking spray. Set aside.

  3. In a big bowl, whisk together the eggs with salt and pepper. Next, add chopped veggies, cheese, and cooked bacon.

  4. Divide mixture evenly into muffin tin, filling about 1/2 full.

  5. Bake in preheated oven for 12-15 minutes.
